Basic Banana Chia Pudding
Chia seeds are high in fibre and is able to absorb at least 5x its weight in water making it extremely hydrating to your intestines and a great way to keep you satiated. However precisely because it has such absorbent power, it is crucial to take in lots of liquid when taking chia otherwise you may end up having chia seeds stuck to your intestine walls rather than un-stick what's on them. This is why I love making chia pudding because the chia seeds have already been soaked in the liquid for many hours and is well hydrated before it enters my stomach. One important point to note is that although chia seeds are now a common item on supermarket shelves, not all are equal and just like any other seed, nut or grain we need to choose them wisely. I choose Organic Traditions because they use a food grade natural sanitizer to ensure all of their nuts and seeds do not contain aflatoxins (read: mold)! And having this show up it one of my blood test previously when I wasn't aware of this issue, I'm sure glad that I have found this brand that goes a bit further than just providing organic. Ingredients:
1/4 cup chia
1.5 cups coconut water or nut milk
1 ripe banana
Splash of vanilla extract (optional)
Method:
Pour all ingredients into a bowl or jar.
Blend lightly until fully mixed or mix thoroughly with a spoon.
Let it set in the fridge for at least 4 hours. Enjoy!
